We've brought this coffee back, which combines two rare opportunities for us: yeast fermentation and coffee from Nicaragua! Finca la Bastilla is based out of Jinotega, Nicaragua. We tried six different coffees from this farm, all delicious and all processed beautifully. The farm also owns its own mill, ensuring total control over the handling of the coffee, and that care and control really shows through with this coffee. This year, La Bastilla shows up as a delightfully syrupy and tropical cup, with rich pomegranate and sweet peach and papaya notes.
