Chiapas is located on the border of Mexico and Guatemala. The state of Chiapas is small, but holds an extremely complex history, and a rich biodiversity. It is a hub of coffee production in Mexico, despite its small geographic size. This year, in addition to a community lot soon to arrive, we are featuring two single farmer lots located in this region.
First is from a farm called El Capulin, owned by Esdras Giovany Bartolon. Esdras and his brothers planted the entire farm together, among natively growing capulin cherry trees. This coffee shines with a clear and bright acidity like plum and tangerine, with sweet caramelized sugar notes on the finish.
