La Roca is a larger sized farm in Tolima, Colombia, owned by Jorge Rojas. At only 37, Rojas' farm has received plenty of recognition alongside the likes of Wilton Benitez. This single variety Caturra goes through the typical washed process, but when it comes time to ferment the pulped coffee, some juice and fruit from prior fermentations are added back in. This gives the microbes a head start, rather than building fermentation from square one. The result is sweeter, a bit brighter, and with a bigger fruity punch. A silky body with tropical fruit funk pairs with the aroma of sweet wine.
