If Villa Betulia is our mulled wine and holiday spice coffee, Finca Milan is the dancing sugar plums! This is an absolutely wild coffee with notes of black cherry soda, apple and watermelon hard candies, bubble gum, and everything nice. Going along with this dancing flavor is a super-active fermentation process the mill has dubbed "Culturing Nitro Fermentation". Active yeast and bacteria cultures are added to a bioreactor with the washed coffee cherries. The whole container is then infused with nitrogen, which kickstarts desired fermentation. Yeast thrive in nitrogen rich environments, and use this alongside sugar as a main food source. The bioreactor and its contents are carefully monitored, recording acid and sugar levels, along with temperature, to ensure everything goes smoothly during the fermentation stage. The result is this beautifully sweet and surprisingly effervescent coffee experience!
